Recipe- Cindy's Really Good Au Gratin Potatoes


Here is a recipe that I found online and tried a couple of weeks ago. It's so delicious and has definitely become a staple side dish in our house! I usually double the recipe to make a big 13 x 9 pan:


8 red potatoes
1 1/2 cups cracker crumbs (I use Ritz crackers)
2 Tablespoons melted butter
2 Tablespoons all-purpose flour
1 cup milk
1/4 teaspoon dry/ground mustard
1/4 teaspoon salt
1/8 teaspoon pepper
1 1/2 cups grated cheddar cheese

1. Place the potatoes in a large pot and cover with water. Bring to a boil over high heat, then reduce to medium-low, cover and simmer until tender. You want to make sure they are just on the brink of getting soft, but not too soft. Drain and allow to cool. Slice into 1/4 inch slices and place into a baking dish.

2. Preheat oven to 350 degrees.

3. Melt the 2 Tablespoons of butter in a saucepan over medium-low heat. Whisk in the flour and stir until the mixture becomes paste-like and light golden brown. Gradually whisk the milk into the flour mixture and bring to a simmer over medium heat. Cook and stir until the mixture is thick and smooth. Stir in the mustard, salt, pepper and cheddar cheese until the cheese has melted and the sauce is smooth. Pour over the potatoes and sprinkle the top with your cracker crumbs.

4. Bake until crumbs are golden brown and potatoes are bubbly, about 35-45 minutes.
